Liquid Glucose

LIQUID GLUCOSE or Corn Syrups are purified concentrated aqueous solution containing a mixture of glucose, disaccharides and polysaccharides obtained by hydrolysis of starch. It contains not less than 70.0 per cent of dry matter. As a clear, colorless or brown viscous liquid, miscible with water the substance may partly or totally solidify at room temperature and liquefies again when heated to 50oC.

Main functional properties of liquid glucose are :-

  • To keep food products fresh
  • It doesn't crystallizes when stored
  • A very good food preservative
  • A good freezing point depressant
